Blueberry Crepes

This weekend Philip and I decided to make crepes. Crepes are our favorite breakfast and we love to eat them with fruit.  We have tried out many variations for the crepe batter until we found our favorite one.

1 cup flour,1/4 teaspoon salt, 1/2 teaspoon sugar, 2 large eggs, 1/2 cup of milk, 1/2 cup of water, 2 tablespoons melted butter.

Pour  slightly less than 1/4 cup of batter into a well greased 9 inch.pan and make sure to rotate the pan around to spread a into a thin layer.

The edges will start to curl and if you shake the pan slightly and the crepe moves, it is ready to flip over. Cook on both sides until it is a light golden brown color.

Crepe Batter

Makes about Ten

1 cup flour

1/4 teaspoon salt

1/2 teaspoon sugar

2 large eggs

1/2 cup of milk

1/2 cup of water

2 tablespoons melted butter

Mix a medium bowl combine the dry ingredients, flour, salt and sugar. In a separate small bowl mix the eggs, milk,water and butter. Combine the wet ingredients into the dry but be sure not to mix too long to prevent too much air from getting into the batter. We like to use just a wire whisk, but if you use a mixer be sure to let the mixture sit for at least 15 minutes.
